I appreciated this post a great deal, as I have had many of the same thoughts lately. Good luck with balancing it all out. It is never as simple as it sounds. Take care of yourself.

Hi Tim, Sorry it's taken so long to reply. If you don't use sugar you will have a bowl of cucumber ice. The sugar actually helps to keep the sorbet softer. I try to use as little as possible in my recipes, though I learned long after I created this one that you can invert the sugar using citric acid for even better texture. You can try playing around with how much sugar you add by increasing the amount of citric acid in the simple syrup to see if it still freezes well, but I'm not sure how it will taste. Good luck!

While growing up my mother made bread (light bread)every week and I remember watching her kneed the bread 30 minutes by the clock. When I decided to stop smoking (cold turkey) I baked bread to keep my hands busy. My poor husband ran around the neighborhood handing out bread and telling everyone to stay away until at least 2 weeks were up as I was a grouch.

I really like seafood and especially crab so on my trip to Thailand we stayed on an island where they had a seafood BBQ. Naturally I order crab and what a mistake! They did not cook it enough and it was a jellied mass and totally uneatable. I have a feeling they did not have a clue what they were doing. I wonder if crab can be cooked on an open fire?

Your comment about coming home from the farmer's market with more than you can possibly use is a problem I often have. I am spending the winter months on the North Shore of Hawaii with my daughter and visit the local Sunday Market every week. I buy all my veggies and fruits there plus grass fed beef, range chickens, homemade butter and etc. What fun! I always bring home more than I can possibly use but the entertainment of the market is worth it.

I like to cook and create with family and friends. Everyone is busy preparing what they do best while joking and drinks float around the kitchen table. During holidays neighbors and friends drop in and the kitchen looks like someone picked it up and shook it. Wonderful!
